Y2K Cream of Potato Soup

Bring to boil and simmer the following ingredients, until onion, bacon and potato cubes are tender (doesn't take very long at all):

1 1/2 qrts. water
several green onion tops, chopped
1 small onion, finely chopped
2 large potatoes, cubed
2 Tblsps. butter
1 tsp. vinegar
2 slices bacon, finely chopped

Then add:
2 cups Idahoan Instant Mashed Potato Flakes (need some?....call me :)
1 3/4 cups evaporated milk (I used 1 can and then just used reg. milk to make
up the small amount left over)
Salt & Pepper to taste

I added the milk, S&P, then the flakes, shaking them in gradually and stirring gently. Heat through, but do not boil. Serve hot.

Here is the story behind the recipe -- My precious husband, Wayne, was very concerned last year about the Y2K "bug". He wanted to be prepared, so every time he was in the grocery store he would buy non-perishables and stash them in some big cabinets I have in my laundry room. Well, by the time Y2K came and went, without a hitch, we had an enormous amount of food. But, he was determined that his family, not to mention the church brethren, would not go hungry! :) Anyway......we decided that we would give the food to families that needed it. (keep in mind, he bought mostly in LARGE containers and we have a small family). However, there are a couple of items that no one seems to care for. One being instant potato flakes - 4 LARGE metal cans - good brand, too: Idahoan.

Well, I do use these flakes to make "Crusty Baked Chicken" (I'll send that recipe later), but believe me, it would take years to use all those flakes. So, today I happened to look under the plastic lid of the flake can and there was a recipe. I just finished making it and it's delicious! Of course, I added fresh potato cubes to it to give it substance. Needless to say, I've named the recipe..................Y2K Cream of Potato Soup.
